La Vieja de Jonay Hernández
La Vieja began because I, Jonay, wanted to do as I pleased. Cooking, running a restaurant and bringing the flavours that I carry with me in my memory to Palma.
La Vieja was created from nothing, without interior designers and led entirely by myself. I designed the spaces, the decoration, the atmosphere and so on. That way, I managed to create a space that is fresh and fun at the same time, where luxury comes second, demonstrating that you can provide quality service and gastronomy. I like to make fun and elaborate food that reaches all those who want to enjoy a different kind of meal. I don’t like comfort. I like risk and that’s why we take risks in our kitchen even though we sometimes make mistakes, but there is excitement behind what we create.
I’m happy to have in my team people like Carlos, who has supported me since the beginning in the crazy things I do and when my temper gets the better of me on a daily basis. I have a lot to thank him for, since he has never asked for anything. He has always pushed forward without complaining, grappling with things as if the project were his own. And I do think it is his too but without the administrative burdens! (he laughs).
From Tuesday to Friday we have a set lunchtime menu, which is made according to the seasonal produce that is available, aside from the à la carte menu. We also have a menu of fun, different cocktails and a wine list with extensive Canarian options.
