As evening falls, the terrace at Gaikan, on Muro Beach, begins to buzz. The Mallorcan sky begins to turn purple as the embers of the kamado (the traditional Japanese charcoal oven) are lit. This is how the evening begins at GAIKAN, a restaurant where three gastronomic worlds merge into a unique experience.
GAIKAN is a contemporary ritual of flavours, textures, silence and music that takes place on the terrace of the famous Fusion19 restaurant. Led by chefs Aleix Serra and Marc Marsol, GAIKAN Restaurant & Sushi Bar offers an original gastronomic narrative: a story told through each dish, each cocktail, each note emanating from the DJ as the lights fall softly on a table that looks like a work of art.

This space brings together the pinpoint precision of Japanese sushi, the aromatic intensity of the Mediterranean and the vibrant shades of Latin American cuisine, without them competing with each other. They respect, listen to and elevate each other.
The tasting menu is the epicentre of GAIKAN. It begins with a welcome gesture that is as subtle as it is powerful: sourdough spelt bread with Mallorcan EVOO and smoked butter. It is a threshold, a statement of intent. From there, everything flows like a well-orchestrated symphony: vegetables with crème fraîche and cheese crumble, salmon tartare tartlet with avocado and smoked roe, black pork cheek sandwich with black garlic...
The menu features clear tributes: to Japan, with its delicate and precise usuzukuri, perfumed with tosazu sauce and herb emulsion. To the Basque Country, with San Sebastian-style ray reinterpreted with pil pil sauce made from fish bones. And to Asia and umami, with delicacies such as stewed ray fritters or the impressive wagyu beef with cauliflower in textures, sweetbreads and Cantonese sauce.

Sushi, grilled and cocktails: a winning trio
Sushi is part of the essence of GAIKAN. Technique, harmony and aesthetics reveal a deep respect for Japanese tradition. Each piece is conceived, executed and served as if it were unique. And then there is the fire. Mastery of the Japanese kamado gives a depth of flavour that cannot be imitated. Meat and fish reach a new dimension, marked by smoke, charcoal, precise cooking and simply perfect textures.
The signature cocktails strike a precise and creative balance that dialogues with the cuisine without losing their identity. The Gaikan Sour balances the classic with the contemporary; the Negroni ‘Matrix’ surprises with its disruptive aesthetics and spicy undertones that invite further exploration. Each cocktail pairs perfectly with the food and the moment.
But GAIKAN would not be what it is without its atmosphere. Live music on Mondays at 8:30 p.m. and DJ sets from Wednesday to Sunday transform the space into something resembling a club. There is no loudness, just rhythm, elegance and a constant flow of intertwining stimuli: the sound of ice clinking in a glass, the aroma of grilled food, soft laughter at the next table, the knowing glance of the waiter who knows exactly when to bring the next dish. GAIKAN stands as a modern temple of well-understood fusion. A restaurant that seeks to excite by all means... And it succeeds.
