The project stems from the vision of Felipe Vessena and Tatiana Weiman, founders of Surry Hills — recognised as one of the world’s best cafes in 2025 and 2026 — and is cemented this year with a new milestone: HOTTO ranks among Spain’s best cafes.

The selection of single-origin beans, a Japanese-inspired brunch menu and matcha of exceptional quality come together to create an offering that balances technical rigour with an enjoyable experience, all within an atmosphere designed to foster calm and presence.
