The name ONA, which means ‘wave’ in Catalan, symbolises that constant movement between land and sea, between produce and the grill, between tradition and modernity. Like the waves, our cuisine flows naturally, breathes the Mediterranean and is built around fire, with a deep gratitude to the land, the sea and those who work them.

Here, food is neither a trend nor a spectacle: it is raw ingredients, technique and time. The Josper oven becomes the heart of the kitchen, imparting character, texture and flavour to meat and fish, whilst always respecting the essence of each ingredient. Every dish is a wave that washes ashore, brimming with identity, simplicity and truth.
