Kaizen and Nobis Hotel Palma team up for a one-night-only Japanese fine dining experience this July 26th

On Saturday, July 26th, Nobis Hotel Palma will host an exclusive summer gastronomic event in collaboration with Kaizen Sushi Bar & Shabu Shabu, a leading name in contemporary Japanese cuisine on the island. This one-night-only pop-up promises a refined omakase tasting menu, with an optional pairing curated by Moët Hennessy.
Kaizen, located in the heart of Palma’s old town, is known for its exceptional product quality, technical precision and heartfelt hospitality. The pop-up will be led by chefs Ismael Rojo and Raúl García, both with extensive backgrounds in Michelin-starred restaurants.
Ismael Rojo, originally from Galicia, trained under chef Hideki Matsuhisa at Koy Shunka (1 Michelin)* in Barcelona and has honed his craft across sushi bars in Spain, Belgium and beyond. Raúl García has cooked at top-tier kitchens including Zuberoa, Marc Fosh, Zaranda, Cap Rocat and Santi Taura, and opened his first restaurant at just 29. His flair for global fusion cuisine shines in every dish.
The tasting menu includes delights such as Japanese scallop tataki with ponzu and kizami wasabi, Mallorcan red prawn dumplings with yuzu air, and A5 Kagoshima Wagyu tataki grilled over robata, ending with inventive desserts that elevate the experience.
The event takes place at Nobis Hotel Palma, a restored 12th-century palace reimagined with Scandinavian design by Wingårdhs studio. With just 37 unique rooms, the hotel embodies refined simplicity, modern luxury and a warm, understated elegance.
The tasting menu is priced at €120 per person, with the optional Moët Hennessy pairing at €80. Limited seats available. Advance booking and prepayment required. Cancellations allowed up to 48h before the event.
