The echo of civilizations: five chefs and a journey through Mallorca's memory at Maristel Hotel & Spa

The echo of civilizations: five chefs and a journey through Mallorca's memory at Maristel Hotel & Spa

The echo of civilizations

Understanding an island's cuisine means understanding the traces that the sea and the centuries have etched into its stoves. On Saturday, October 24, 2026, Maristel Hotel & Spa, nestled in the idyllic setting of Estellencs, presents a new edition of its Cocinando La Tramuntana series: «Mallorca: The Echo of Civilizations – 10 Hands», a tasting lunch conceived as a sensory and chronological journey through the cultures that forged the Balearic spirit.

Chefs José Luis Adán y Nuria Obrador

To bring this gastronomic chronicle to life, Maristel brings together a standout lineup of five creators shaping the island's contemporary culinary scene: José Luis Adán and Nuria Obrador (both from Maristel Bistró), Edgar Rodríguez (Aromata), David Méndez (Es Balcó de Son Vida), and Javier Escoriza (Olula Café).

Chef Edgar Rodríguez

The history of the island in six culinary chapters

Moving away from conventional banquet formats, this experience unfolds as a living narrative. Together, these five chefs will take on the challenge of interpreting six defining periods of Mallorca's history through six unique courses: from Talayotic origins and the Roman footprint, through Byzantine nuance and Andalusian splendor, to the trade routes, the Christian reconquest, and the deep roots of traditional Mallorcan home cooking. Ancestral ingredients, time-honored techniques, and aromatic nuances find new life through the contemporary and precise vision of their creators.

Chef David Méndez

A conversation between kitchen, cellar, and after-dinner rituals

The afternoon gets underway at 1:30 p.m. on Maristel's spectacular terrace, perched between the terraced slopes of the Serra de Tramuntana and the deep blue Mediterranean, with an informal welcome featuring signature snacks and local wine to awaken the senses.

At the table, the six-course journey will be harmonized with a meticulously curated pairing of six wines. The chefs will personally present each dish, sharing the historical inspiration behind every recipe, while the sommelier guides the pairing, revealing the provenance and storytelling of each pour. True to the soul of Mediterranean hospitality, the experience will draw to an unhurried close with an extended after-dinner sobremesa filled with conversation and petits fours.

Chef Javier Escoriza
