Nicolás Blasco and Cyril Claudel founded Sa Cova in 2014, establishing it as one of the most iconic dining destinations in Ibiza’s old town.

Located behind the Old Market, right in the heart of Dalt Vila, Sa Cova Old Town offers an intimate terrace overlooking the historic quarter and a unique atmosphere within a natural cave typical of Ibiza.

In 2026, the kitchen is led by executive chef Julian Gonzalez, whose contemporary bistronomic cuisine blends French, Mediterranean and South American influences, always working with seasonal produce and a modern approach to gastronomy.

Sa Cova Old Town is open every evening from 7pm to 2am, offering dinner service only in an elegant, warm and vibrant setting.
