Behind the hotel’s own gastronomic offer is the partnership formed by Fran García, executive chef, and Alessio Padrini, sous chef. The day begins at La Sabina, the space open to the Mediterranean where Fran and Alessio roll out the Blessed Breakfast: newly baked artisan bread, fresh seasonal food. Then there’s the Mundo Huevos franchise that broadly reinterprets the universal classic with speciality coffees, and freshly prepared food in a setting where the morning passes in a leisurely manner, and the sea view does the rest. As the day goes on, La Sabina effortlessly evolves into a Mediterranean all-day dining establishment, where bowls, salads and a light but inspired menu accompany that uniquely Ibizan time that falls between midday and sunset. The social baton then passes to The Palm Club, a Mediterranean oasis with Balinese beds, private tents and tropical vegetation. Here a high quality, zero-kilometre, gastronomic menu can be enjoyed by the swimming pool with the same generosity as the setting itself: paellas, fresh fish, signature snacks and a sushi bar that turns midday into something with more ritual than just lunch, and with an energy that changes along with the light until the space becomes more intimate and absorbing as evening falls.

In the lobby, The Alchemist treads its own path from early morning speciality coffee and artisan pastries through to the signature cocktails that command the limelight when daylight starts to fade and transforms this meeting point into a more social, dynamic space that functions as a natural bridge between day and night. At sunset, The Cloud 9 awaits at the top of the building with an offer that this season includes the collaboration of Handshake Speakeasy, known internationally as one of the great exemplars of modern cocktail mixing.
