The culinary offering combines local ingredients and contemporary techniques with Asian, Italian and Latin American touches. The menu features fresh and delicate raw dishes, such as sea bass tiradito with strawberry leche de tigre or prawn carpaccio with yuzu and furikake, alongside dishes cooked in the Josper oven, rich rice dishes, handmade pasta and selected meats.
Vegetables also take centre stage with recipes full of character, whilst the Mediterranean Sea inspires much of the fresh, flavourful and constantly evolving cuisine.
