- Watermelon with seeds removed: 500 g
- Highest quality tuna, finely diced: 400 g
- Chives to taste
- Sesame oil: 2 soupspoons
- Kimchi sauce
- Soy sauce
- Poppy seeds
Cut the watermelon into slices and dehydrate for 6 hours at 70%.
Cut the watermelon into dice of the same size as the tuna, and osmotise with soy sauce. Drain thoroughly, and mix with the tuna.
Add the sesame oil, chives, salt and drops of Kimchi.
Finish by sprinkling poppy seeds over the surface.
