At KNO–MA, everything begins in silence. At the counter, time stands still and every action takes on meaning. KNO stands for knowledge; MA is the pause that brings everything into order. Here there is no rush, only intention.

Miguel Rodríguez crafts this experience from the very beginning. Every morning he personally visits the fish market, selecting the produce that will define that day’s menu. His time at UMU (1* Michelin), alongside Ryo Kamatsu, shaped a way of working based on precision, seasonality and absolute respect.

Driven by DANI CELIS, creator of Izakaya High Japanese Cuisine, KNO–MA emerged as a natural evolution: a step further, more intimate, more essential. The space, designed with fine materials and measured warmth, complements the experience without distracting from it.

Just 12 diners, no à la carte menu. A sequence that is never repeated.
