In the summer of 2023, Scandinavian hotel chain Nobis Hospitality Group will be opening its third European project after Copenhagen and Stockholm. That being said, the hotel group did already had a presence in Palma, having managed Hotel Concepció by Nobis in the Mallorcan capital for several years.

The location chosen for the new opening is an impressive 12th century palace in Carrer de les Caputxines, in the heart of Palma’s medieval centre. The building has been fully refurbished both inside and out, and the interior has been designed by prestigious interior design studio Wingårdhs in the finest Swedish tradition: sober, elegant and sophisticated. It contrasts with the palace’s ancient structure of stone, brick and wood, resulting in a sophisticated yet highly welcoming atmosphere with a predominance of cream and earthen colours.

The new five-star hotel by the Nordic company will offer “modern luxury” where less is more, avoiding over-attentiveness or excessively ornate spaces that guests could find intrusive. Each of the thirty-seven guest rooms and suites have a unique shape and decoration, while many of the pieces of furniture are genuine works of art, such as the bed heads designed by Carl Hansen, or the lighting by Flos and Örsjö.

NOI: a restaurant for a gourmet hotel

NOI is the food brand of Nobis Hospitality Group. Food at NOI is inspired by the finest tradition of European cooking and primarily features local, seasonal produce and the typical cuisine of the cities where each restaurant is based. Xema Álvarez, executive chef at NOI and Xalest, the restaurant at Hotel Concepció by Nobis, has created an inspiring menu where both hotel guests and non-guests will enjoy seasonal dishes from the sea and land, and classic NOI dishes such as fried red prawns in pil-pil sauce and toasted longfin tuna with a salt crust.

Celebrated studio Wingårdhs was in charge of creating the interior design of the restaurant and it fuses the past and the present to create a bold contrast between the new and the old. Inlaid tables, alabaster hanging lamps and Alba chairs by Dusty&Deco are set amid ancient vaults and columns to create a sophisticated yet casual atmosphere that is perfect for spending an enjoyable time giving into the delights of good food and great conversation.

The restaurant has 65 seats divided between a delightful terrace and garden, where you can start your meal with a refreshing cocktail, and the comfortable lounge. At Nobis Palma, food is also available at the rooftop bar where, thanks to the hotel’s fantastic location, you can enjoy views of Palma Cathedral and one of the best sunsets in the city. This space is a wonderful oasis in the capital and the perfect place to enjoy an impressive selection of cavas, champagnes, wine and craft beers brewed on the island. And if hunger strikes, Chef Xema Álvarez has created an exclusive menu of pinchos made from the finest local produce.
