La Rosa Vermutería celebrates ten years of flavour, soul, and tradition in Palma

In June 2015, in a modest space on Calle de la Rosa, a project was born in Palma with a clear vision: to stay true to authenticity, quality ingredients, and timeless appeal. Ten years later, La Rosa Vermutería & Colmado has become a beloved institution in the city—an essential stop for locals and visitors alike seeking culinary experiences with soul.

From the beginning, La Rosa embraced the spirit of traditional northern Spanish taverns, offering a warm, nostalgic setting where vermouth takes centre stage and the menu honours the country’s rich culinary heritage. Over the years, its offering has matured into a thoughtful selection of artisanal preserves, market-fresh dishes, classic tapas, and more than 50 curated vermouth labels. “We wanted to become a classic from day one,” says co-founder Nacho Velasco, who launched the project alongside Uvete Conde and Álvaro García. “A place that stays with you—part of everyday life and the city’s collective memory.”

Throughout this decade, La Rosa has evolved without ever losing its essence. Signature dishes like the gilda, dry-aged beef croquetones, creamy allioli potatoes, boquerones in vinegar, and crispy fried squid continue to share the spotlight with newer creations like prawn tartare and house-made vermouth-based cocktails. Their own vermouth label, crafted specifically for La Rosa, reflects the team's commitment to detail and a distinctive identity.

To mark its tenth anniversary, La Rosa will host a celebration from July 1–4, offering diners complimentary aperitifs with reservations, off-menu surprises, and subtle tributes to the flavours that have defined its journey.

Today, La Rosa Vermutería & Colmado stands as the heart of La Rosa Troupe—a culinary collective led by Velasco, Conde, and García that has given life to a series of vibrant spaces: from La Rosa Catalina to the lively Garito Glup Yeah!, the stylish La Carpintería, an in-demand catering service, and the unique Vagón de La Rosa. United by a shared philosophy, each project celebrates life through food, warm hospitality, and a distinctive style that fuses tradition with a contemporary bar culture.

With a decade of history, La Rosa hasn’t just stood the test of time—it has grown stronger by staying true to its roots: a place you always want to return to, where every tapa tells a story and every vermouth is a toast to what endures.
