From vinyl to glass: Mirall’s new musical menu

At the heart of the elegant Nobis Hotel Palma, Mirall is rewriting its cocktail menu for 2025 with a line-up full of rhythm, creativity and feeling. This sophisticated bar, now a reference point in high-end mixology in Palma, is inviting guests on a sensory journey through music, inspired by the unmistakable style of Rolling Stone magazine.

“This year the menu is changing completely,” says Davide de Fiore, bar manager at Nobis Hotel. “We’re sticking with the magazine format, but this time we’re taking it in a more musical direction, something more Rolling Stone.” They’ve built a soundtrack together as a team; a playlist of over 100 songs that will set the mood throughout the day. From that playlist, they’ve picked 12 tracks and turned them into cocktails with soul.

Each drink is named after a song. “The menu will only list the band and the song title, but the story behind each one gets told at the table, face to face,” Davide explains. It’s not just about having a drink. It’s about experiencing a story, a memory or an emotion sparked by the music and brought to life in a glass.

One of the most evocative creations takes its cue from Sicilian singer Marco Castello: “In Sicily, it’s common to have brioche with sorbet for breakfast, so we’ve created a sgroppino with lemon sorbet, almond vodka and prosecco, which is a classic combination there.” Another cocktail channels the Brazilian groove of the band Azymuth, using cachaça to conjure the rhythms and tropical flavours of their homeland.

To round it all off, there’s a QR code on each page of the menu that lets guests listen to the song that inspired the cocktail, in real time. “We want it to be a complete experience, combining the visual, taste and sound.”

But beyond the creativity and innovation, Mirall stands out for its attention to detail and genuine hospitality. “Our aim is for every guest to feel looked after from the moment they walk in,” says Davide, who, despite his youth, built his career between England and Italy before landing in Palma. “I’m really into Dry Martinis or Negronis. I like simplicity, things with character and elegance,” he says. His style, perfectionist but laid-back, defines the bar’s spirit: a place where hospitality and cocktails go hand in hand.

If Mirall were a song, Davide knows exactly which one it would be: Disco Sole, by Nu Genea. “Elegant, classic, but joyful. Like us. We don’t want to be your typical hotel bar. We want to be the best hotel bar in Palma,” he says with conviction. And they’re well on their way, helped by their in-house lab, which allows them to work with clarification techniques, infusions and enzymes to create modern cocktails that still stay true to classic roots.
