Aubergine by Atzaró sets in Ibiza´s countryside, between Santa Gertrudis and San Miguel, this restaurant isa celebration of seasonal flavours, in a romantic country-chic setting. Aubergine is part of the Atzaró Group, a name synonymous with quality, friendliness, professionalism and good flavour.
Chef Rosina Walter and manager Esteban Gutiérrez lead a kitchen that cooks with love, in a homemade farm-to-table style, drawing on organic produce from the Atzaró estate, not far away. And so the restaurant offers a wide range of delicious, light, healthy dishes with characteristic flavours of Mediterranean cooking with ingredients from the Atzaró Agroturismo Vegetable Garden.
Aubergine by Atzaró has interior dining rooms in a traditional Ibiza country house, and a dining pavilion but the real star of the show is the terrace, completely integrated into the countryside of the north and overflowing with native plants. For young children there is a playground which they will not want to leave.
As the sun sets, the wood-fired barbecue becomes the heart of the restaurant, offering beautifully grilled meats, fish and vegetables full of rustic charm.
