Like fine wines, some places improve when they learn to take their time. Now in its third season, Es Fumeral continues to grow without compromising its soul: it remains an oasis of laid-back luxury where the Mediterranean reigns supreme, yet is more mature, with a menu that pays tribute to fire and salt. As a new feature, this season Alberto Pacheco’s sanctuary in Cala Nova is embracing the island’s beloved late afternoon and early evening drinks tradition, which has evolved in a wild and instinctive way to make the most of all that the island has to offer until sunset.


 

Ibiza has its own rhythm, a delightfully relaxed pace that we often forget about when caught up in the whirlwind that is the summer season. Fortunately, authentic places like Es Fumeral, which is firmly rooted in the beautiful Cala Nova, remind us of the island’s true essence. The project, which began as a heartfelt tribute to Mediterranean simplicity and connection with the environment, is now in its third year and has reached an enviable level of maturity. The restaurant has managed to preserve its original identity, becoming more cohesive and flavourful in the process.

Presiding over the grill (and the overall culinary experience) is Ibizan chef Alberto Pacheco. His solid career, which has taken in renowned establishments such as Zuberoa, Can Jubany and Estimar, speaks for itself. However, at Cala Nova the language is purely island-inspired. Pacheco approaches his ingredients with the utmost sensitivity and respect, applying just the right amount of technique to ensure the natural flavours are never masked. His cuisine is a fluid dialogue with Ibiza’s culinary heritage, bringing time-honoured recipes to the contemporary palate without losing the authenticity that comes with cooking just a few steps from the sea.

This season, the Es Fumeral menu is more extensive and more mature as well as highly consistent. Spanish fish and seafood remain the undisputed stars of the show. From the delicate raw creations to a mesmerising journey through the embers of the Josper oven, each dish makes complete sense. Diners cannot leave without trying the iconic bluefish gilda (a nod to master chef Rafa Zafra), the tantalising Barbate tuna belly katsu sando and the tuna belly sashimi. For something extra special, there is also the grouper fideuá and the spectacular sea cucumbers with garlic and egg yolk. And for dessert, an emotional journey back in time with their delightful take on a flaó in cheesecake form.

However, any great culinary experience must be complemented by a selection of equally impressive drinks. This year, beverages take centre stage under the guidance of Daniel Pailler. His exquisite wine selection has been carefully chosen to be paired with the robust flavours of the grilled meats and the fish and seafood, rounding off a flawless experience and further reinforcing the restaurant’s identity through its captivating wine selection.

Since rushing is an unknown concept for life in the Mediterranean, Es Fumeral is introducing a new rhythm. Due to popular demand, the restaurant is launching the long-awaited 5 p.m. to 9 p.m. service, designed to celebrate the sacred Ibizan late afternoon and early evening. With a more casual vibe but the same high standards, it’s the perfect excuse to enjoy the magical Balearic light as it changes with a drink in hand.

In the end, true luxury lies in simplicity. Es Fumeral offers casual sophistication—an organic and, above all, authentic concept. A twenty-first-century beach bar, it understands that Ibiza’s greatest treasures are its unspoilt landscape, the flavours of unadulterated ingredients, and time spent in the best company.
