El Carnicero Ibiza. Twelve years, one garden and the finest meat in the world

Some places could thrive on their reputation alone without lifting a finger, and El Carnicero Ibiza could be one of them. After twelve seasons, it is still backed by a clientele that returns year after year to a farmhouse adorned with cacti and climbing plants in the heart of Ibiza Town, and a meat selection that remains, without a doubt, the most extensive on the island. But for Max D’Andrea, Javier Rodríguez and Emanuel Gentili, success is no excuse to sit still.


 

The old whitewashed farmhouse that is home to the restaurant is one of those places that etches into your memory. The gardens filled with lush plants and centuries-old cacti creation an atmosphere blending the wild and the intimate in a way that rarely happens naturally. This year, the garden takes centre stage even more so thanks to a new space dedicated to signature cocktails—a quiet spot where you can take your time, which has become a rarity in Ibiza. Surrounded by greenery and far from the hustle and bustle, it is the perfect place to linger either before or after dinner.

Chuletón and entraña. El Carnicero

On the grill, Emanuel Gentili continues to be the guardian of a selection of meats from all over the world. Grass-fed Argentine cuts, which offer all the intense flavours of free-range, sustainably raised cattle, share the spotlight with classics such as Black Angus from the USA, T-bone steaks, tomahawks and prime-grade rib-eyes. These cuts have made El Carnicero Ibiza a must-visit spot for the island’s most discerning carnivores. Since day one, its philosophy has remained unchanged, seeking out the best produce from all over the world and treating it with the respect it deserves, without any frills that distract from the bare essentials.

But perhaps the most significant new development this season is its decision to also turn its attention to the sea. El Carnicero Ibiza has always recognised that not everyone shares the same passion for meat, and this season that has led to an ambitious and extensive seafood menu. Excellent ceviche, grilled shrimp, flavoursome octopus and almadraba tuna—a product that, when prepared properly, possesses a character that is hard to match—expand the menu to include everything the Mediterranean has to offer.

Stilt-walkers. El Carnicero

What happens each night at El Carnicero is still somewhat difficult to explain to those who are yet to experience it. Javier Rodríguez, a fixture in the Ibizan nightlife scene since the legendary KU days, creates an atmosphere that defies categorisation. Neither a typical restaurant nor a club, neither formal nor chaotic, El Carnicero Ibiza is the exact point at which fine dining and Ibiza nightlife converge whilst staying true to their essence. The waiters glide between the tables, the music accompanies the action without overpowering it, and the warm lighting makes everything seem to happen at just the right moment. Twelve years later, the magic remains intact.

Whilst some restaurants become predictable over time, for a decade El Carnicero Ibiza has been demonstrating that a commitment to quality produce and the ability to reinvent itself are not contradictory concepts.
