This Friday, Februeary 20th, Can Limo reopens its doors in San José with a clear statement of intent: "for its eleventh season, the restaurant returns to the cuisine that defined its beginnings." Marcos Pavón and Stefi have chosen to reconnect with the project’s roots and revive the essence that turned Can Limo into a gastronomic reference in the village.
Chifa cuisine takes centre stage once again. For those unfamiliar with the concept, chifa is the fusion of Peruvian and Chinese culinary traditions, born from Cantonese immigration to Peru in the 19th century. It is a vibrant, flavour-packed cuisine where wok cooking, soy sauce, ginger and fried rice meet ají amarillo, fresh coriander and bright citrus notes. It is balance, fire and freshness. Technique combined with heritage.
