Ses Roques has been standing since the 1960s and its walls hold memories. Pink Floyd, Bob Dylan, James Taylor and King Crimson passed through this venue in Sant Ferran before anyone really knew how to explain why Formentera had such a hold on people. This summer, that very same space plays host to XO Formentera by chef Dabiz Muñoz, who comes to the island for the first time. The combination makes perfect sense: a place filled with history yet one that is completely unpretentious, and a chef who has spent years proving that the best cuisine doesn’t need a tablecloth.



Dabiz Muñoz comes to Formentera for the first time, and he does so with a unique concept to fuse food with music at Ses Roques, one of the most historic venues on the island. The collaboration with Ses Roques is no ordinary arrival: it’s the first time XO has set foot on this island, and the fact that it is doing so in one of the most historic and soulful venues in the entire archipelago speaks volumes about the way Dabiz understands the expansion of his universe. It’s not about going just anywhere, but about reaching the place that shares the same energy as his project.

Formentera Sando Burger. Ses Roques

The menu that Dabiz Muñoz has designed exclusively for XO Formentera is as short as it is punchy: three sando burgers and some chips that have already become a statement of intent in their own right. The Gyoza Sando Burger encapsulates the chef’s philosophy, with the spirit of the gyoza in a mayonnaise, chilli oil and emi sauce on a base of aged beef, toasted butter brioche and cheddar cheese. The Formentera Sando Burger pays homage to the island with a local sobrasada mayonnaise, a parmesan cloud and a sour cream barbecue sauce that turns every bite into something unexpectedly Mediterranean. And the Txuleta Sando Burger, with its spicy smoked miso sauce and grilled txuleta fat, is the punchiest and meatiest option of the three. Chips with tajín seasoning and a choice of three sauces—barbecue, truffle jalapeño and chilioli—round off a menu that fits perfectly with this concept.

This season, Ses Roques enters a new era that goes far beyond adding a famous name to its line-up. The project was born out of a desire to evolve while respecting its roots, to integrate the local community into what it is building and to preserve the authentic character of a space that has been part of Sant Ferran’s DNA for decades. XO’s gastronomic offering coexists with a daily music and cultural programme that turns the venue into a meeting point where gastronomy, live concerts and DJ sessions share the same space just as naturally as Bob Dylan and the Formentera hippies did 60 years ago.

XO Formentera opens from 20:30 at Carretera de la Mola km 6.6, in Ses Roques, Sant Ferran, and will be there throughout the 2026 summer season. An exclusive gastronomic offering by Dabiz Muñoz, in one of the most historic venues on the island, with live music and DJ sessions. Formentera has a new destination for nights out.
