The son of Mallorcan restaurant owners, Rigo has worked alongside great names in the food world such as Albert Adrià, and from them has learned the importance of combining tradition with the avant-garde.

Rigo describes his approach at Petunia as being clear and transparent: “there is no avant-garde without tradition”. His goal is to surprise diners with his food while always supporting local produce from the islands. From honey made near Cala Carbó to Mallorcan porc negre sobrasada and cheese from Mahon, each ingredient reflects the essence of the Balearics.

La Mesa d’es Vedrà is in the heart of Hotel Petunia and combines incredible views of Es Vedrà island with authentic and honest food. Chef Baltasar Rigo, who is passionate and knowledgeable about Balearic cooking, has designed a menu that reflects local flavours and products. His philosophy is based on perfectly combining tradition and innovation, using fresh, seasonal ingredients, many from the hotel’s own garden.

The restaurant menu features delights such as marinated aubergine with Mahon cheese and porc negre sobrasada, dry rice with ‘potera’ squid, saffron aioli and codium, monkfish with cured porc negre pancetta suquet, creamy basmati rice and parsley oil, and Can Company porc negre suckling pig with grilled lettuce hearts and sautéed garlic and celery, among others. Each mouthful is a journey through the flavours of the Balearic Islands, and dishes are meticulously prepared to surprise and delight diners.
