Ten years. Ten summers. Ten seasons in which cuisine, cocktails and music have intertwined to build something more than a restaurant: a place that dances to the beat of its own drum. In 2025, IT Ibiza celebrates a decade of unforgettable nights, doing so true to its own unique style, as a meeting point, nocturnal ritual and sensory destination in itself.

Since its opening in 2015 in Botafoc Ibiza, IT has marked a turning point in the island’s culinary and social scene. Because people come to IT Ibiza for the atmosphere, but stay for the music and come back for the flavours, the details and that unique blend of sophistication and warmth.

IT Ibiza’s merit lies in having managed to evolve without losing its identity. The Italian-Mediterranean concept of its early days with a cosmopolitan style has, over time, been transformed into a benchmark of contemporary hospitality where every element—from the menu to the music—responds to a coherent philosophy that celebrates life with taste, rhythm, style and lots and lots of flavour.

It is for this reason that the heart of IT continues to be its cuisine, now led by Aldo Palladino as executive chef and Christian Sasso as head chef. Together, they have created a concept that reinterprets Italian tradition with a modern twist, balancing technique, ingredients and emotion. The menu is a tribute to the culinary heritage of the southern European country but does not get bogged down in nostalgia. At IT Ibiza the classic is fearlessly brought up to date.

Dishes such as the spaghetti with five varieties of tomato and the Pizza IT are already the stuff of legends. However, the restaurant—now in its tenth season—is enriched with an even more local approach based on local vegetables, fresh fish brought in every morning by suppliers from the island and a raw Mediterranean seafood section that pays tribute to the Balearic sea with refinement and a sense of originality.

Cocktails as a prelude and epilogue

At IT Ibiza, however, the experience does not end with the last course. Nor does it begin with the first course. The bar instead plays a leading role in the Dinner & After Dinner concept, and its language goes far beyond the classic Italian aperitif. Bar manager Alessio Olivieri has designed a liquid menu that accompanies every moment of the evening, from the first sip to whet your appetite to the late night cocktail that prolongs the conversation and marks the beginning of a new part of the evening.

The cocktail bar offers an honest and technical vision in equal parts. Refined classics, intelligent reinterpretations and in-house creations that interact with the environment are crafted from Mediterranean botanicals, seasonal fruits and signature distillates—all with one clear purpose: to enhance the experience, not overload it.

 

Rhythm as language

Something that sets IT Ibiza apart (and has done so for the past ten years) is that here, music is not just an accompaniment: it is part of the soul of the place. Every night, the resident DJs design a soundscape that evolves with the atmosphere, featuring elegant house, enveloping melodies and a measured but constant rhythm. It is that subtle connection between what you hear, what you drink, and what you experience at the table that gives meaning to the Dinner & After Dinner concept. At IT Ibiza, dinner is not the end but a transition. What begins as a gastronomic experience gradually becomes a social, musical and sensory evening. No rush. No fanfare. Just a natural process.

Over the past ten years, IT Ibiza has witnessed and played a leading role in the island’s transformation. It has seen new ideas emerge, has shared space with icons and has resisted trends. Its secret? A clear vision: understanding luxury not as excess but as a balance between product, service, atmosphere, and emotion.

In 2025, its anniversary will be celebrated with a revamped menu, a strengthened team, an improved musical programme, and with the soul of the project—to offer those who walk through its doors a complete experience—still intact. From the first bite to the last chord, from the kitchen to the mixing desk and the bar, IT Ibiza is that place where things always happen. Where time flows differently. Where ten years are not an ending, but a statement that says “we’re just getting started”.
