After several years of experience in Évora, the M’AR De AR Hotels group's wish came true, and the result is here: the Alentejo has come to Lisbon! Chef António Nobre transports the concept of Mediterranean food, where Alentejo cuisine predominates, combining innovation with tradition.
Born in the Alentejo region, he always looked on his mother's and grandmother's culinary arts with great affection. The Alentejo cuisine, he says, is based on a constant discovery of smells and flavours. Take, for example, the acidic Alentejo bread, unlike any others, the rustic meats, the presence of river fish, and the golden thread that is woven into each dish: the regional olive oil.
