From July 15th to August 30th Six Senses Ibiza, on the island’s northern Xarraca Bay, collaborates with HIBA, a celebrated restaurant from Israel run by celebrity chef Yossi Shitrit. For a limited time, guests will have the opportunity to experience the unique culinary pop-up that combines the freshest Ibizan produce from the resort's organic farm with the multisensory fine dining experience HIBA is renowned for.

 

A Menu Plucked Fresh from the Resort’s Organic Farm

Fresh, local produce lies at the heart of Six Senses Ibiza, with each of the three restaurants offering seasonal menus and a ‘Farm-to-Table’ approach. HIBA's carefully curated pop-up menu showcases some of the restaurant’s acclaimed dishes with local adaptations. Think “Kolorbi”, raw kohlrabi filled with three types of ginger pickled kohlrabi, or fish sashimi with kiwi, fresh horseradish and wasabi leaves topped with ponzu sauce made from green bell pepper juice.

The concept is built around seasonal fare, meticulously crafted by chef Yossi Shitrit and his team. With a passion for working with local produce, Shitrit takes full advantage of Six Senses Ibiza's organic farm, where herbs, vegetables, and fruits are cultivated with utmost care and respect for nature. Each dish pays homage to the bounty of the island, elevating traditional Mediterranean and Middle Eastern flavors to new heights.

The pop-up will be hosted in the intimate setting at the resort’s Secret Bar, located in The Beach Caves in best seafront location. Each seating accommodates a maximum of 12 guests, ensuring an exclusive and personalized dining experience.

HIBA’s Culinary Creations to Stimulate All the Senses

"Our collaboration with Six Senses Ibiza is a celebration of the connection between food and nature," says chef Yossi Shitrit. A selection of around twelve beautifully plated dishes will not only tantalize taste buds but also stimulate visual, olfactory, and tactile senses. From the vibrant colors of the fresh produce to the enticing aromas wafting from the kitchen, every element is carefully curated to create a captivating sensory journey.
